OKRA SPINACH / BHENDI PALAK

Spinach with paneer or with alu is a very common combo. I tried a new combo and used two of our fav veggies together and the end result was outstanding. This is my contribution for JFI- Going Green



INGREDIENTS:
Okra
Spinach- 1 Bunch washed and chopped
1 Big Onion Sliced
1 tsp Jeera seeds
1 tsp Coriander Powder
1 Tbsp Kitchen King Masala
1 tsp Chili Powder
1 tsp Haldi Powder
Salt as per taste

METHOD:

  • Wash and dry Okra and cut them lengthwise.
  • In a heavy bottomed pan heat oil and had jeera seeds. When jeera starts sputtering add sliced onions and fry them until brown.
  • Now add okra and add all the rest of the masala ingredients to it and keep the flame on high and cook okra until they are completely cooked.
  • Now add chopped spinach into this and adjust the salt and cook untill all the spinach in competely cooked. Note: Don't add any water to this as spinach lets enough water and this should be good to cook the vegetable.
  • Serve hot and enjoy it with white rice or chapathi.

Very clever!!Bendekai with greens.Looks great.I will try this,I have some frozen Okra!I still have to cook for JFI.Still cooking for RCI.Too many events!:D

First of all, I love your website. The pictures are absolutely fantastic. I tried the Okra and Spinach dish. I would have never thought of that combo, but let me tell you, my two picky girls hate Okra. I made them try the dish and when I wasn't looking they took more. I guess that says it all. It was very delicious. My hubby loved it too. Thank you for sharing. I will try more recipes you have out there. I love to cook and try new things. I am also a vegetarian. It is so nice of you to share so many recipes. I know of so many people that cook well, but when you ask them for a recipe they always sneak away from telling. Anyway thank you again!!

Seema I tried few recipes from your blog.. and this okra-spinach I liked so much. Though few of my friends and my mom dint like it much but I just loved this combination. Now if both veges are at home I just mixed them and cook. Thanks dear.
